Italian Stuffed Shells

This a wonderful Italian recipe that has became a regular part of our dinner routine. We serve it with garlic bread or a salad for a delicious dinner.

Ingredients
1 lb ground beef or a page of veggie crumbles
1 large onion, diced
1 clove garlic, chopped
8 ounces mozzarella cheese, shredded
1/2 cup breadcrumbs
1/4 cup fresh parsley, chopped
1 egg, beaten
1 (26 ounce) jar of your favorite spaghetti sauce
8 ounces tomato sauce
1/2 cup parmesan cheese, grated
18 jumbo pasta shells, cooked and drained (it actually makes more like 25)
salt and pepper, to taste
2 tablespoons Italian seasoning

Directions
1. Boil water for pasta.
2. Meanwhile, in a large skillet, brown ground beef or veggie crumbles, onion and garlic; drain and cool. 3. Cook pasta in water, drain.
4. Preheat oven to 400 degrees.
5. While pasta is cooking, combine meat/veggie crumbles, mozzarella cheese, bread crumbs, egg, Italian seasoning and parsley; season with salt and pepper.
6. Mix spaghetti sauce with tomato sauce; cover bottom of a 13x9 casserole dish with 1/4 of the sauce. (We suggest lining your pan with aluminum foil to make clean up easier).
7. Stuff cooked, drained shells with the meat mixture and place on top of sauce in dish in a row. 8. Cover shells with sauce and sprinkle with parmesan cheese.
9. Bake in oven for 20-25 minutes or until bubbly and browned.
