I've been so busy the last few weeks that I have been unable to find any time to spend baking. I hope that changes tomorrow when I plan to put some fresh apples to good use. I am adding the Andes Mint Cupcakes pictured above to my list of items I must make soon. Mint is a flavor that I associate with enjoying during the colder temperatures of late Fall and Winter. The lovely green color of the frosting makes these cupcakes very pretty and I can absolutely see these as being a beautiful dessert option to offer at a holiday party. The recipe is available here.
i totally love mint chocolate although my sisters HATE it. This cupcake looks so delicious. i want some right now.
