I made dinner for my entire family last week and wanted to serve a warm, cozy dessert. I decided to serve a slightly hearty gooey fruit crisp. While preparing this dish was very simple and quick it does take a while to bake, however, during the entire baking time you home will smell amazing.
Ingredients: 4 cups of frozen peaches
2 cups granulated sugar
1 cup light brown sugar, packed
1 1/2 cups plus 2 to 3 tablespoons all-purpose flour
2 1/2 cups frozen mixed berries
1/4 teaspoon salt
1 cup quick-cooking oatmeal
1/2 pound cold butter, diced
Directions:
1. Preheat the oven to 350 degrees F. Butter the inside of a 9 inch pie dish.
2. Mix the peaches with 3/4 cup granulated sugar, 1/2 cup brown sugar, and 2 tablespoons of flour. Toss well. Mix in the mixed berries. Allow the mixture to sit for 5 minutes. 3. Combine 1 1/2 cups flour, 1 1/4 cup granulated sugar, 1/2 cup brown sugar, salt, oatmeal, and the cold, diced butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is pea-sized and the mixture is crumbly. 4. Pour the peach mixture evenly into the pie dish. 5. Sprinkle evenly on top of the peaches and mixed berries. 6. It is very important to line a baking sheet with aluminium foil to place the pie dish on. This fruit crisp will bubble over the dish.
7. Bake for 1 hour, until the top is browned and crisp and the juices are bubbly. 8. Serve with ice cream or whipped topping.
