Grandma's Oatmeal Cake

Oatmeal cake is a comfort food. This cake is very moist. The toasted coconut and walnut frosting is mouthwateringly delicious. The cake tastes slightly like a spice cake.

Ingredients 1 cup oats
1 1/4 cups boiling water
1/2 cup butter
1 cup white sugar
1 cup brown sugar
2 eggs
1 1/3 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla extract

For topping:
6 tablespoons melted butter
1 1/2 cup brown sugar
1/2 cup evaporated milk
1 1/2 cup coconut
1 1/2 cup walnut
1 teaspoon vanilla extract

Directions
1. Pour water over oats, let stand. 2. Cream 1/2 cup butter and sugar. Add eggs and blend in a large mixing bowl. Sift the flour, baking soda, salt, cinnamon, and nutmeg together. Add sugar and egg mixture. Next add vanilla and oatmeal mixture. Blend well. 3. Pour into 9 x 13 pan.
4. Bake in preheated 350F degree oven 30-40 minutes.
5. To make icing: Mix melted butter, 1 1/2 cup brown sugar, evaporated milk, coconut, nuts, 1 teaspooon vanilla. 6. Pour over hot cake. 7. Put cake under broiler. Watch close so nuts don't brown. Should only take about 5 minutes. Happy baking,
