I have vague memories of my great aunt making the best oatmeal cake. It was a dessert that made frequent appearances at family events. While I have failed to recreate my great aunt's family favorite this extremely moist chocolate cake is a great substitute for the time being.
Ingredients:
1 3/4 cups boiling water
1 cup rolled oats
1 cup packed brown sugar
1 cup white sugar
1/2 cup butter softened
2 eggs
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 tablespoon unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract
2 cups milk chocolate chips
2 cups white chocolate chips
1 1/2 cups chopped walnuts
Directions:
1. Mix water and oatmeal in mixing bowl, and let sit 10 minutes.
2. Add sugars, butter or margarine, and eggs. Mix well.
3. Add flour, baking soda, cocoa, vanilla, and salt. Blend.
4. Stir in 1 cup of the milk chocolate chips.
5. Pour into greased and floured 9 x 13 pan. Top with 1 cup milk chocolate chips and chopped nuts.
6. Bake in a preheated 350 degrees F oven for 30 minutes.
7. Cool cake.
8. In a microwave or double boiler melt white chocolate chips and drizzle over cake.
