On The Menu: Rustic Strawberry Tart

I always make this tart for my Mom on special occasions like Mother's Day and her birthday. It is a favorite of her's plus it is so easy to make. In just a few minutes you can have it baking in the oven and your home smelling delicious.

Ingredients:
1 frozen puff pastry sheet, thawed
1 lb strawberries, washed, destemmed, and quartered
1/2 cup sugar
2 tsp cornstarch
juice from half lemon
water for brushing
turbinado sugar for sprinkling

Directions:
1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Set aside.
2. Wash, destem, and quarter your strawberries. Add them to a large bowl along with the sugar, cornstarch and lemon juice. Stir and set aside.
3. While the strawberries are marinating, roll out the puff pastry sheet on a lightly floured surface until it's about 1/8" thick.
4. Transfer to lined baking sheet. Spoon strawberry mixture into the middle of the pastry sheet, leaving about an inch and a half border. Fold up the sides of the sheet, free form. Brush folded sides lightly with water and sprinkle with turbinado sugar.
5. Bake for 30-35 minutes until crust is golden and strawberries are bubbling.
6. Let sit for 5-10 minutes before cutting.

Rustic Strawberry Tart

I made this Rustic Strawberry Tart for dessert on Mother's Day and it was a huge hit. My mom had two pieces at dinner and later that evening went back for a third piece. This recipe is incredibly easy and has only a few simple ingredients. The key to this recipe, which is very important, is to have good, ripe, sweet strawberries. 


Ingredients:
1 frozen puff pastry sheet, thawed 
1 lb strawberries, washed, destemmed, and quartered 
1/4 cup sugar 
2 tsp cornstarch juice from half lemon (approximately 3 tbsp.)
water for brushing 
additional sugar for sprinkling
