Taco Casserole

We made the recipe below last weekend for a quick, easy dinner. We have the recipe in order to make enough for just 4 people. We also substituted the ground beef with veggie crumble. This was a very filling dinner when served with rice and a green salad.

Ingredients: 2 lb. ground beef
2 (15 oz.) cans kidney beans
16 oz. tomato sauce
4-8 tsp. chili powder
2 tsp. garlic powder
4 c. coarsely broken tortilla chips
1/4 c. taco sauce
1 c. onions
2 med. tomatoes, chopped
2 c. shredded Monterey Jack or Cheddar cheese

Directions:
1. Cover the bottom of a baking dish with the broken tortilla chips. 2. Cook the veggie crumbles or beef. If using beef, drain. Add beans, tomato sauce, taco sauce, chili powder and garlic powder. Heat. 3. Cover the chips with your taco mixture. Sprinkle with onions, tomatoes, and cheese. 4. Bake for 30 minutes or until bubbly at 350°F.
