On the Menu: Caesar Pasta Salad
We made this pasta salad last weekend for our sister's wedding shower. It was a huge hit and several people asked for the recipe while we were at the shower. This pasta salad was so easy to make and makes a great side dish. Jessica thinks it would also be a huge hit served as an entree with chicken.

Ingredients:
6 oz (about 1/2 box) penne pasta
4 cups Romaine lettuce, cut into small pieces
1 cucumber, diced
1 red onion, thinly sliced
2 cups cherry tomatoes, cut in half
1/2 cup shredded Parmesan cheese
1 bottle Caesar salad dressing

Directions:
1. Cook and cool pasta. To keep pasta from being sticky make sure to use plenty of water when cooking it and once cooked, drain it, and then rinse with cold water.
2. Once pasta is cool mix all ingredients together. Pre-shredded Parmesan works best with this recipe.
3. Right before serving toss with desired amount of dressing. (Place dressing in the refrigerator the night before so it is cold when it is time to mix it with the salad).
