Crispy White Chocolate Peanut Butter Cups

This is an extremely quick and easy treat to whip together. I made these for my sister because she loves buckeye candy, the ingredients are essentially the same, however, the construction time is drastically shortened. Unfortunately because of the tornadoes and storms in Kentucky last weekend she was unable to get here to try these but everyone else loved them.

Ingredients:
1 1/4 cup smooth peanut butter
1/4 cup butter, room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
1 1/2 cups crispy rice cereal
1 3/4 cups white chocolate chips

Directions:
1. Preheat the oven to 350 degrees. Lightly spray a mini muffin pan with non-stick spray. Add a tablespoon of white chocolate chips into each cup. Melt the chips in the oven for about 5 minutes, keeping a close eye on it. Chocolate burns easily. With a spoon smooth the top the chips while they are still warm. 2. In a large bowl, cream together the peanut butter and butter until smooth. add the powdered sugar and vanilla, mix until combined. Fold in the crispy rice cereal. 3. Drop the peanut butter mixture by heaping tablespoons into each mini muffin cup. Smooth a little with a spoon and refrigerate for at least 30 minutes before eating.   4. mmm, they sound so delicious. my sister actually made some peanut butter cups too. she put marshmallows in the top. and she sprinkled it with chocolate syrup. it was soooooo GOOD!
