Happy Halloween!

We had an excellent weekend and we hope you all did too. We thoroughly enjoyed the Taylor Swift concert Saturday night in Lexington, KY. The preconcert was great and the evening just got better and better. Before Taylor took the stage David Nail sang a few songs and Need to Breathe sang, both were fantastic! Then came the main event. Taylor put on a great show. She wore the most beautiful dresses and sang wonderfully. We arrived at the preshow at 5:00 and the concert wasn't over with until almost 11:00. Afterwards we spent the night in Lexington, then we got up on Sunday morning for some shopping!
I know I am going to be tired today, but I am so excited for the trick or treaters tonight! We had a few last night and the kids were adorable! We hope everyone is having a magically evening this Halloween.
Happy Halloween!

Taking A Day Off

I always feel as if I am constantly busy and have a hectic schedule. It is always late when I get home from the office, I often bring work home with me, and when I am not working my time is largely filled with chores and errands I don't usually have time for. So whenever I do have free time I am usually too tired to enjoy it or feel like going out.

This weekend I am taking the day off. I am going to wake up early and go out for pastries and a latte. Following that I am due a trip to a spa for a pedicure and facial. I am going shopping and keeping my open for some new blouses now that the weather is cooler. In the evening I plan to go to a nice restaurant for dinner before seeing Taylor Swift in concert.

Everyone needs the occasional day off.

On the Cutting Edge

Recently my two best friends and I decided we needed to get a little more into the Halloween spirit. So what did we do? We performed brain surgery! Nah, not really but we did carve some pumpkins! Our pumpkins are in the photos above. Mine is the pumpkin in the middle with the two ghosts! Creating a Jack-o-lantern is so much fun. We retrieved our patients and our operating utensils (actually a carving kit for like $5) and went right to work. First we sawed off the top of the head and pulled out all of the pumpkin goozles (that's what we call the slimy pumpkin insides). Then we etched our designs on our pumpkins and created fabulous works of art! It was a lot of fun and a little messy, but I am sure we are all looking forward to it next year.
Did you get a chance to carve some pumpkins?

One of the things I love most about this time of year is Halloween. Everything associated with it is perfect: the scary movie marathons, the candy, the things that go bump in the night, but my favorite thing is the trick-or-treaters. Greeting the cute children to give them candy and little toys is one of the things I look forward to most every year.

Come in for a Bite...

I know, I know, it is not Halloween yet. I have been wishing that I had planned for a Halloween Party. Well... not really a party, but a small gathering with me, my sisters, and few friends for Halloween. This is a perfect time to have a "small gathering." Halloween is all about dressing up, playing make believe, and eating yummy sweets. If I had decided earlier to get this together, but as it is now I have waited too late and I will be busy all weekend, I would have wanted food similar to below (I guess now, I am ready for next year!):

A Cute Bootie

I get extremely excited about footwear each Fall. The one item I want most this Fall, correction that I NEED this Fall, is a pair of flat brown boots. I have been lusting over flat brown boots for months. These boots are extremely practicable, fashionable, and look amazing with everything from jeans to leggings to dresses.

What is on your Fall must have list?

Halloween is exactly one week away! I always love this time of year. The weather is finally starting to cool down, the leaves changing provide beautiful landscapes, and all things Halloweeny is guaranteed fun. Handing out candy to the kids is a real treat for me and my sister. We love seeing all of the kids in their costumes and seeing just what they will be this year. Especially the little kids they are so cute and really get into the Trick or Treating. My sister and I aren't the only ones that enjoy it, our dog always barks a little but as the kids get closer he gets so excited and just bounces around them wagging his tail.
If you aren't going to be handing out treats this Halloween you should definitely make some time to watch a Halloween related movie or two with some friends. Some of my favorite Halloween movies are above some are cute and some will provide you with a good laugh. And some aren't about Halloween but they involve Halloween related things like monsters or witches.

Chocolate Peanut Butter Torte

Nothing is better than chocolate and peanut butter together. It is my all time favorite flavor combination. This torte recipe takes a little time to prepare but is a simple recipe that is rich, creamy, and decadent.

Ingredients: For the crust:
32 Oreo cookies, finely processed into crumbs
5 1/3 tbsp. unsalted butter, melted and cooled
Small pinch of salt

For the crunch:
1 1/4 cups salted peanuts, finely chopped, divided (for the filling, crunch and topping)
1/2 cup mini chocolate chips
2 tsp. sugar
1/4 tsp. ground cinnamon
Dash of ground nutmeg

For the filling:
2 cups heavy cream
1 1/4 cups confectioners’ sugar, sifted
12 oz. cream cheese, at room temperature
1 1/2 cups creamy peanut butter (not natural)
2 tbsp. whole milk

For the topping:
1/2 cup heavy cream
4 oz. bittersweet chocolate, finely chopped

Directions:
1. To make the crust, preheat the oven to 350 degrees F. Butter a 9-inch springform pan and place it on a baking sheet. Combine the Oreo crumbs, melted butter and salt in a small bowl. Toss with a fork to moisten all of the crumbs. Press into a thin layer covering the bottom and sides of the springform pan. Freeze the crust for 10 minutes. Bake in the preheated oven for 10 minutes, then transfer to a wire rack and let cool completely before filling.
2. To make the crunch, in another small bowl combine 1/2 cup of the chopped peanuts, mini chocolate chips, sugar, cinnamon and nutmeg. Toss with a fork to mix and set aside. 3. To prepare the filling, in the bowl of a stand mixer fitted with the whisk attachment, whip 2 cups of the cream until it holds medium peaks. Beat in 1/4 cup of confectioners’ sugar and whip until the cream holds medium-firm peaks. Scrape the cream into a separate bowl and refrigerate until needed. 4. Wipe out (do not wash) the mixer bowl, replace the whisk with the paddle attachment, and beat the cream cheese with the remaining 1 cup of confectioners’ sugar on medium speed until the cream cheese is satiny smooth. Beat in the peanut butter, whole milk, and 1/4 cup of the chopped peanuts until well combined.
5. Using a large rubber spatula, gently stir in about 1/4 of the whipped cream just to lighten the mousse. Still working with the spatula, stir in the crunchy peanut mixture, then gingerly fold in the remaining whipped cream. Scrape the mousse into the crust, mounding and smoothing the top. Refrigerate for at least 4 hours or overnight; cover with plastic wrap as soon as the mousse firms. 6. To finish the torte, put the chopped chocolate in a heatproof bowl set over a saucepan of simmering water. Leave the bowl over the water just until the chocolate softens and starts to melt, about 3 minutes; remove the bowl from the saucepan. Bring the 1/2 cup of cream to a full boil. Pour the cream over the chocolate and, working with a rubber spatula, very gently stir together until the ganache is completely blended and smooth.
7. Pour the ganache over the torte, smoothing with a metal icing spatula. Scatter the remaining peanuts over the top and chill to set the topping, at least 20 minutes. When the ganache is firm, remove the sides of the springform pan. Refrigerate until ready to serve.

Thin knit sweaters are a must have item for this Fall. They easily provide that extra little bit of warmth that you need on cool Fall mornings or evenings. They can also be layered, so that you can pull them off during the warmer part of the day when they are not needed or have them to easily slip on when it gets cooler. I also love all of the different patterns and colors. Thinner sweaters are great for layering because they are light and aren't going to weigh you down. I love a great layered look.
